After my half marathon at the Disney Food & Wine festival, I am inclined to get back on my diet. I realized that everyone else is not onboard with this concept, but that is just too bad. I am going to get myself in shape once and for all to my liking. This means eating lean during the holidays and finding low-cal alternatives to the regular foods that I love to eat.
One of my favorite places to look for low-calorie foods is the cooking channel‘s website. I wanted to get a few recipes from the site but I could not decide what to eat. I was very hungry and I needed an old standby that I have used before. Since I am back on my diet, I need to eat well without major grains or breads. This is a delicious chili recipe.
1 can Black beans or Kidney beans
1 whole medium onion chopped
3 tomatoes chopped
1 whole large red pepper chopped
3 cloves of garlic chopped
1/4 tsp chili pepper powder
1/4 tsp chill flakes
1 Habanero de-seeded pepper chopped
1 pinch of salt & pepper to taste
1/4 tsp cumin
1/4 tsp thyme
1/4 tsp coriander
1 pinch of turmeric
1 jar spaghetti sauce
Cook the meat and season with salt & pepper. Cook till lightly thoroughly cooked then add to the large pot that the chili will be cooked in. Add the onion to brown lightly in a pan. Cook the other pepper, tomato and garlic till soft and add to the pot as well. Add all of the spices and stir well. Add the jar of spaghetti sauce and beans and simmer for 20 minutes.
Add additional heat to taste. Eat!
I eat this when I do not want a salad but I need something low-fat. No rice needed.
It fills me up in 2 bowls and it keeps me from eating junk. Buen Apetito!
