The summer has been hot but my food has been cool. I started eating salads for the summer, so I do not eat the more fattening foods, like chocolate cake or fry bread or brownie sundaes (see how it can deteriorate in just a few minutes). I love food!
Summer is the time for summer reading, training outdoors and becoming sleek and slim. the only way to do that is to eat well and ditch the junk. Yes, barbecues have chips and dip, (and alcohol, but that is another story) but most of the food is healthy and great to eat.
Skip the potato salad, macaroni salad, and cole slaw (really, you don’t need it), and eat real salad with lettuce, tomatoes and other fun foods. Everyone is going crazy over avocados, nuts and different fruits in salad. These salad additives can be low calorie and feed your sweet tooth without killing your waistline.
My salads mostly contain leafy greens that can be eaten raw, and a protein. Also, I love to add nuts, hot sauce, oil and balsamic vinegar. The hot sauce gives the salad a bit of spice. I use various hot sauces (not tabasco) from all over the globe, especially sriracha. I always run out of it so I better go buy more.
Most of the time I crave the wrong foods but since the summer is so hot, and they are heavy, I will not eat them. This goes for all foods except chocolate, who cannot eat chocolate (barring any food allergies).
Here are two summer salads that I love to eat after a run.
Avocado Strawberry Pineapple Chicken Salad
1/4 head of Lettuce
5 halved strawberries
5 chunks of pineapple
1/2 Haas avocado
1 cup cooked chicken breast shredded
balsamic vinegar, and oil to taste
silvered nuts (optional)
Start with the lettuce ad end with the chicken and balsamic vinegar. Enjoy!
A similar salad that is spicier but just as good is the:
Tuna Apple Pineapple Almond Salad
1 cup lettuce greens (approx)
3 slices of apple
5 cubes of Pineapple
1 tablespoon of sliced almonds
sriracha, balsamic vinegar and oil to taste
This looks weird but tastes fabulous! Hopefully this will keep me eating well and make me forget the burgers and fries. Ok. I do not forget the burgers and fries but I won’t eat them either.
